  • Total Time: 32 minute

Ingredients

For the Crust and Crumble:
– 1 cup all-purpose flour
– 1 cup rolled oats
– ¾ cup light brown sugar
– ½ cup unsalted butter, melted
– ½ teaspoon baking soda
– ¼ teaspoon salt

For the Cream Filling:
– 1 cup cream cheese, softened
– ½ cup granulated sugar
– 1 teaspoon vanilla extract
– 1 large egg

For the Peach Filling:
– 3 cups fresh peaches, diced (about 4-5 medium peaches)
– ¼ cup granulated sugar
– 1 teaspoon ground cinnamon
– 1 tablespoon lemon juice

Instructions

Follow these clear steps to create your Peaches and Cream Crumble Bars:

1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8-inch square baking dish by greasing it or lining it with parchment paper for easy removal.

2. Make the Crust and Crumble:
– In a medium bowl, combine the flour, rolled oats, brown sugar, baking soda, and salt.
– Pour in the melted butter and stir until the mixture resembles coarse crumbs. Set aside 1 cup of this mixture for the crumble topping.

3. Press the Mixture:
– Take the remaining mixture and press it evenly into the bottom of the prepared baking dish to form a crust.

4. Prepare the Cream Filling:
– In a mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar, vanilla extract, and egg. Mix until creamy and well combined.
– Spread the cream filling evenly over the crust layer.

5. Make the Peach Filling:
– In another bowl, toss the diced peaches with granulated sugar, ground cinnamon, and lemon juice until well coated.
– Spread this peach mixture evenly over the cream filling layer.

6. Add the Crumble Topping:
– Sprinkle the reserved crumble mixture over the peach layer.

7. Bake:
– Place the baking dish in the preheated oven and bake for 35-40 minutes until the top is golden brown and the peach filling is bubbling.

8. Cool:
– Once baked, remove the dish from the oven and allow it to cool for at least 30 minutes before slicing.

9. Slice:
– Cut into squares or bars for serving.
